Your oysters will already be chilled when you pick them up. Transport them in a cooler with ice or ice packs. Once home, you may keep them in the cooler, or transfer them to a refrigerator. I personally keep my oysters in the refrigerator crisper drawer. Placing a bowl or plate under them will keep them from scratching the refrigerator glass  shelving. Do not freeze. Keep them on top of the ice in your cooler. Do not let them sit in fresh melt water from the ice in a cooler. Freshwater will kill them.

Your oysters are still alive when you get them. Kept properly chilled and gently handled, your oysters can survive two weeks or more out of the water. They are best consumed within a week of harvest. If an oyster is open, it has died and should not be eaten.

I, OysterMom, never shucked an oyster until a started farming oysters! I watched a few locals, then turned to YouTube for lessons. (2) 60-Second Video Tips: The Best Way to Shuck an Oyster - Bing video

I shuck using the method shown in the video, of holding the oyster on the table, not in the palm of my hand. I find it safer! If you are shucking with the oyster held in the palm of your hand, be sure to 1. Wear a protective glove or several layers of a towel and 2. Always use a proper shucking knife.

I only sell oysters in the shell at my warehouse and farmers markets. I do offer an oyster bar catering service for events where shucked oysters are served. Contact me for more information and pricing.
